Notes

Convection oven preheated to 212 degrees Fahrenheit, set to steam.

Wearing foodservice gloves.

Ingredients

1 ea. Corn Muffin, gluten free, thawed
½ oz. Smoked Gouda, sliced
1 ea. Egg, large, whole
½ oz. White Cheddar Cheese, sliced
½ oz. Muenster Cheese, sliced

Equipment

  • Knife
  • Cutting board
  • ½ Sheet of parchment
  • Foodservice gloves

Preparation

  1. Cook the egg in an oiled 4 inch muffin pan in the pre-heated convection oven resulting in a medium hard egg. Set aside to cool.
  2. Cut the corn muffin in half. 
  3. Place the Gouda on the muffin bottom, top with the cooked egg, then cheddar and muenster cheese
  4. Close the sandwich with the remaining half of bun and wrap in parchment and place under refrigeration until ordered.
